If you haven’t been to the Old Mill Brew Werks lately, you haven’t been to Old Mill Brew Werks. The new restaurant and brewery taphouse has recently moved to 803 S.W. Industrial Way, a location with a vista that includes Bend’s Old Mill pond and shops. The former location on nearby Upper Terrace Drive is now home to Rat Hole Brewing. New owners of Old Mill Brew Werks are Courtney and Mark Stevens, along with Tim, Genie and Sean Kelley. Courtney Stevens said her family bought into the business because they fell in love with chef Rudy Garcia’s cooking. His dedication to seasonal and local food prepared from scratch has breathed new life into the restaurant’s menu, Stevens said. Garcia is “the real deal,” said Stevens, with professional training in French and Italian cuisine. Rudy, a Eugene native, more humbly suggested he honed his cooking skills to support his skiing habit. Beginning in Sun Valley as a line cook when he was 16, he has worked his way up the ranks for more than 20 years. He graduated from Western Culinary School in Portland, took on an internship in Squaw Valley and eventually was made executive chef at River Ranch Lodge near Tahoe City, Calif. Garcia said he never has a bad day when he’s cooking.
Garcia’s use of local products includes Brew Werks’ beers in many of his dishes. Schizophrenic stout is reduced to a sweet caramel sauce perfect for an ice cream topping. Rudy makes the restaurant’s ice cream from scratch, often including a beer in the recipe. A meatloaf dish is made with Brew Werks Amber. And Rudy’s scotch egg has a bit of the Rabble Rouser Red in it. To name a few.
Although the affiliated brewery’s ownership is being consolidated, its brewer is unquestionably Michael McMahon, a Washington brewer whose assistant is also his fiancé, Alejandra Cortes. McMahon in 2010 established Langley Brewing in Langley, South Widbey Island. “But we wanted to live in Beer Mecca, so we came to Bend,” said Cortes.
